chicken sausage and vegetable pasta primavera recipe

The other night my family was craving something hearty and it was one of those nights where I didn’t feel like going to the grocery story so I made something with whatever I had in the refrigerator. I ended up making a chicken sausage and vegetable pasta and it turned out amazing. Best part, it was so easy to make that I would definitely recommend it for all you busy moms out there.


Sausage Pasta

  • 1/2 box Farfelle Pasta Shells
  • 1 zucchini chopped
  • 1 yellow squash chopped
  • 1/2 onion chopped
  • 1/2 bell pepper chopped
  • 4 mushrooms chopped
  • 15 leaves of basil chopped
  • 10 oz of chicken sausage chopped
  • 5 tablespoons low sodium chicken broth
  • 3 tablespoon low fat cream cheese
  • 3 tablespoons fresh Parmesan cheese
  • 2 tsp olive oil
  • 3 cloves garlic chopped
  • Crushed red pepper
  1. Boil Pasta according to box
  2. Pour olive oil in a skillet and saute the onions, zucchini, squash, bell pepper, mushrooms and basil
  3. Cook the sausage in a pan until browned
  4. Add in the cream cheese and keep mixing until it melts
  5. Pour in the chicken broth
  6. Pour sauce mixture and sausage into the pasta and mix
  7. Add in the Parmesan cheese
  8. Top with crushed red pepper
