Sumer time is here and I am always looking for something that can quench my thirst, and satisfy my taste buds. Wanting to beat the heat with some treats? Here are a few treats you and your family can enjoy while you are outdoors or even on vacation! So simple and easy to make!

Mango Mule Mocktail: 4-5 slices of cucumber sliced, 1 oz of honey syrup, 1.5 oz of Mango puree, 1,5 oz of fresh lime juice, 1.5 oz of ginger beer and Ice. Muddle the cucumber and honey syrup on the bottom of a shaker, and then add mango puree, lime juice, ice and shaker.   Strain into a glass with fresh ice and top with ginger beer and stir.

Skinny Coconut Mojito Cocktail: 6 mint leaves, 1 and ½ oz of Ciroc coconut vodka or any other you prefer, 1 teaspoon of sugar, ½ oz of lime juice, 2 oz of soda water. Place mint leaves in a shaker, add ice, coconut vodka, sugar and lime juice and muddle, then add soda water and garnish with more mint leaves.

Simple Summertime Smoothie: 1 cup washed baby spinach, 1 orange – peeled and sliced, 2 slices of fresh pineapple cut into pieces, ½ lime peeled, 1 tablespoon of organic agave nectar, and1½ cups of ice. Put all ingredients in a blender and blend and pour into a tall glass.

Summer Strawberry Spinach Salad: In a salad bowl add a handful of fresh organic spinach leaves, 2-3 sliced strawberries, 1 tablespoon of chunks of goat cheese or feta cheese, 1 teaspoon of glazed sliced walnuts (optional) or plain walnuts (optional) or plain sliced walnuts, raspberry or strawberry vinaigrette, mix everything and serve.

Yogurt snack dots: Use any brand and flavor yogurt you like (Organic Stoneyfield  and Choboni are my favorite brands) Drop one small spoonful of the yogurt on a pizza tray and freeze for a few hours, there you have a treat that the whole family can enjoy on these hot summer days.

Cocoa almond granola slices: wash and cut apples into slices, spread the top with cocoa almond spread, sprinkle granola
