enchilada style quinoa stuffed mexican peppers vegetarian recipe

Mexican food is a great option for both meat and vegetarian eaters.  It is definitely a favorite cuisine in my house so I am always looking for new ways to make healthy Mexican dishes.  We have the standard enchiladas, tostadas (check out Chai Mommas quick and simple tostada recipe), burritos and tacos but I wanted to try something new..Mexican food with Quinoa!!!  I know it sounds weird and not something you would think of adding to Mexican food, but Enchilada Style Quinoa Stuffed Mexican Peppers has now become a family favorite even for my 2 year old son. Rather than putting his quinoa filling into a pepper, I simply rolled his in a corn tortilla and topped with cheese and sauce.

 

Here is the super easy recipe so try it out and let me know how it tastes!  These are definitely lighter than normal enchiladas but fulfill those Mexican cravings in a heather way 🙂

Ingredients
  • 2 organic green peppers slices in half with the seeds removed
  • 1/2 cup organic quinoa, uncooked
  • 1/2 yellow sweet diced organic onion
  • 1 can organic black beans, drained and rinsed
  • 1 can enchilada sauce
  • 1/2 tsp salt
  • 1 tsp fresh miced garlic
  • 1/2 tsp ground cumin
  • 1 tsp black pepper
  • 1/2 tsp crushed red pepper
  • 1/2 cup grated pepper jack cheese
  • 1/2 cup grated cheddar cheese
  • 1 handful of minced cilantro
  • 1 handful Jalapenos
  • Sour Cream (to serve)
Instructions
  1. Cook the quinoa according to the package
  2. Once the quinoa is cooked, mix together quinoa, black beans, onions, salt, garlic, cumin, black pepper, and crushed red pepper in a mixing bowl
  3. Lay the green peppers flat in a deep baking dish and fill each one with the quinoa filling
  4. Poor enchiladas sauce over stuffed peppers and make sure there is enough in the baking dish so your peppers won’t be dry
  5. Top with pepper jack, cheddar cheese, jalapenos and garnish with cilantro
  6. Cover with foil and place in oven on 400 for 20 minutes
  7. Serve with Sour Cream
Notes

* Add more crushed red pepper for a spicy flavor
