Yesterday I asked my kids what they wanted for dinner  (this is the question every night) and they usually say whatever mom. But yesterday they said they wanted “Chinese” and mind you not Asian cuisine is a big hit in our family!

They really enjoy all types of Asian cuisines but Chinese is one of their favorites! Since school has started its been a little hectic with just getting back into routine plus we have soccer and basketball practice so I feel like I am living in my car everyday!  So to whip up this meal in such short time I was amazed that it turned our pretty darn good!

Yummy Asian fusion noodle recipe
Ingredients
  • 1 pack of chow mein or lo mein pack (dry noddles you boil) can find at a local grocery store in the Asian aisle. You can also buy the pre-made one as well.
  • 2 tablespoons soy sauce
  • 1 Teaspoon chili sauce (or less depending on how spicy you like it)
  • 2 Tablespoon oil (your choice, I used grapeseed oil)
  • 1/4 cup of vegetable broth
  • 1-2 carrots julienned
  • 1/2 cup of broccoli florets
  • 1 small red onion diced in big chunks
  • green beans washed and trimmed and cut in thirds
  • 1-2 teaspoon of garlic minced
  • 1-2 teaspoon ginger minced
  • 3-4 green onions sliced
  • *you can always add meat or seafood to this recipe
Instructions
  1. Bring a pot of water to a boil and cook the noodles according to the package directions. Drain and set aside.
  2. Heat a skillet over medium-high heat and add the oil. Add the minced ginger and garlic and stir till golden brown (do not let it burn). Add carrots and onions and cook for 1 minute, then add green beans and broccoli. Add the vegetable broth, soy sauce, chili sauce, then toss in the noodles. Top with sliced green onions.

I cannot believe how amazing this meal turned out while I was rushed! So glad I gave it a try, and did not go out to eat or do take out! The whole family enjoyed it a lot! -Enjoy-
