So this isn’t breaking news. Kale has been all over the place lately. In smoothies, juices, salads, even chips. I’ve had kale in all the aforementioned forms but the last is my latest obsession. I had the pleasure of meeting kale chips several months ago at my local Whole Foods. They were delish but at the steep price tag of $8.99 for a small bag, I was a bit turned off…that’s a lot even for Whole Foods, right? I decided that it couldn’t be that hard to make them myself and after a little internet searching, I realized that they were too easy to make at home to even think of buying.
Even if you’re not a kale lover..try this recipe and let me know what you think. They’re such a healthy alternative to the standard potato chip…rich in antioxidants and packed with other very good for you stuff. And they are so good, it really doesn’t feel like you’re eating something so good for you!
Note: in the picture below, you’ll notice lemon and garlic. I found a recipe that called for these ingredients but ended up going without this time. I’ll definitely try the recipe out soon and let you know how those taste!
|latest obsession: kale chips||
- 5 oz baby kale leaves
- 1 1/2 tablespoons olive oil (the highest quality you can afford!)
- 1/4 teaspoon sea salt
- 2 tablespoons parmesan cheese (optional)
- Preheat oven to 300F
- Toss kale in oil and salt in a large bowl
- Place the kale in a single layer on a baking sheet
- Bake for 15 minutes
- Take out of oven and sprinkle with parmesan cheese
- Bake for another 5 or so minutes, until cheese has melted
- Serve, share and devour. You totally are going to!!
Simply store chips in a airtight plastic container to enjoy for several days. Also, if you cannot find baby kale, use larger leaves but make sure to remove the stems and large veins.
