My 18 month old daughter is really into bars as snacks and while there are some great healthy options out there, I wanted to make my own. Laila really enjoyed the dates we bought recently and likes oatmeal, so I thought I’d try this classic Betty Crocker recipe. I added my own addition of walnuts and also substituted agave for brown sugar, cut the butter in half with greek yogurt instead, used all organic ingredients and broiled the pan at the end for a crispier top…I was happy to make them sugar free and healthy so the whole family can enjoy them too, especially as a healthy sweet treat around the holidays 🙂

Sugar-free Delicious Date Bars

These sugar-free date bars are packed with nutrition and taste so good!
Ingredients
  • Date Filling
  • 6 cups chopped pitted dates
  • 3 cups water
  • 1/4 cup honey
  • 1/2 cup small walnut pieces, (optional)
  • Bars
  • 1 cup agave
  • 1/2 cup butter, softened
  • 1 cup plain greek yogurt
  • 3 cups whole wheat flour
  • 3 cups quick-cooking oats
  • 1 teaspoon baking soda
  • 1 teaspoon salt
Instructions
  1. In large saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
  2. Heat oven to 400°F. Grease bottom and sides of a rectangular baking pan with some butter.
  3. In large bowl, stir agave, yogurt and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.
  4. Bake 25 to 30 minutes or until light brown. Broil for one minute at the end. Cool 5 minutes in pan on cooling rack. Cut into 6 rows by 6 rows while warm.
