vegetarian black bean quinoa chili recipe

Chili is a great food to have on a cold and rainy day but sometimes you feel so full after eating it.  I was on a hunt for a recipe that didn’t make us feel overly full after eating, something that was going to be super healthy for my family and easy to make!  I know, every mom’s dream right?  Well I think I finally mastered this recipe and wanted to share it with all my busy families out there.  It’s super easy and quick to make.  Don’t let the long list of ingredients scare you off because it’s literally chopping and throwing it all in a pot.

Mom’s with little ones, I just pureed this for my 1 year old and he loved it!  A healthy and hearty meal for the whole family.

Ingredients
  • 2 cans black beans
  • 1.5 cups organic quinoa
  • 1 cup spinach cut small
  • 1 zucchini diced small
  • 1 squash diced small
  • 1/2 onion diced small
  • 1/4 cup cilantro cut small
  • 3 tomatoes slightly pureed
  • 1/2 grated cheddar cheese
  • 1 tablespoon olive oil
  • 1/2 cup vegetable low sodium broth
  • 1 teaspoon chili powder
  • 2 cloves garlic minced
  • 1 teaspoon salt
  • 2 teaspoons crushed red pepper
Instructions
  1. Pour olive oil in the pot and let it heat up
  2. Boil quinoa according to packet
  3. Saute onions, zucchini, squash, spinach until soft.
  4. Add garlic, chili powder, salt and crushed red pepper
  5. Add tomato puree and bring to a boil
  6. Add black beans
  7. Add qunioa
  8. Add vegetable low sodium broth
  9. Sprinkle cilantro on top
Notes
Serve with Cheddar Cheese and Sour Cream

    Thanks for this! I made it tonight and it was delicious! My husband is Indian and he approved :-). Our 14 month old son couldn’t keep his hands out of the beans/raw onion/zucchini as I cooked (somehow I managed to get it made with him sitting on the counter for most of the time….!). But when it came time to eat the finished product, it ended up being a little to hot for him. Boo hoo. Next time I make it, I’ll put in less of the red pepper. But overall, it’s sooo yummy!
