This indian inspired spiced corn and shredded wheat recipe is my mother in law’s and it’s so quick, easy and flavorful for breakfast/brunch or even alongside some soup at lunch. I’m so glad I learned it from her since we make it all the time now and hope you love it too! You can omit the green chillies to make it kid friendly!

This delicious blend of corn and spices tastes delicious with shredded wheat, giving breakfast a twist and making it wholesome for a hearty breakfast.
Ingredients
  • 3 cups of organic frozen corn, (wash and drain)
  • 2 cups of shredded wheat cereal (be sure it is unsweetened and break it apart to be loose in the pouches)
  • 1 minced green chili
  • 1 teaspoon grated ginger
  • 1 tablespoon of grapeseed oil
  • 1 teaspoon of mustard seeds
  • a pinch of asafetida
  • 1 teaspoon turmeric powder
  • Salt to taste
  • juice of 1 small lemon
  • 1/2 teaspoon of raw sugar
  • 1 tablespoon of cashews nut pieces
  • diced tomatoes for garnish
  • chopped cilantro leaves for garnish
Instructions
  1. Heat the oil in a large sauce pan and add the mustard seeds and asafetida and when the mustard seeds start to splatter, add the cashew nuts. Heat for 1-2 minutes on medium heat.
  2. Now add in the washed frozen corn.
  3. Add salt and turmeric powder, stir and cover for 5 minutes on low heat.
  4. Then add in the green chillies, ginger, lemon juice (add sugar if you like here) and cook uncovered for about 10 minutes or until the corn gets soft and blends with the spices.
  5. You want the water to evaporate, but still need it moist to add in the shredded wheat so be sure it does not get too dry.
  6. Now, you can add the shredded wheat, mix well, cook for a few minutes and then turn off heat.
  7. Serve garnished with cilantro and tomatoes.
